Spring Rolls Recipe

Spring rolls are a large variety of filled, rolled appetizers or dim sum found in East Asian, South Asian, and Southeast Asian cuisine. The name is a literal translation of the Chinese chūn juǎn.Wikipedia

This fancy appetizer is a combination of various vegetable. But for meat lovers like me, I add beef or chicken to it. It is good for vegans too, without the chicken off course.
Here is the recipe

Ingredients
For the crust

  1. Carrots, 3 medium sized (or as you want it) grated.
  2. Cabbage, sliced
  3. Green peas, cut
  4. 1 onion, minced or sliced
  5. 1 green bell pepper, finely cut
  6. Boiled Beef or chicken, minced
  7. Curry powder
  8. Salt to taste
  9. Black pepper or red chilli powder
  10. Chicken stock
  11. Vegetable Oil
  12. Any other vegetable of choice.


For the seal


  1. 1 tablespoon all purpose flour
  2. 2 tablespoons cold water


For the wrapper

  1. 1 cups All purpose flour
  2. Or 2 cups for more.
  3.  2 tablespoon corn starch (4 cups for more) 
  4.  ½ teaspoon salt
  5. 1 cup cold water
  6. 2 teaspoons vegetable oil


Note: If you don't want to make the wrapper, you can just purchase some already made ones.

PROCEDURE
 FOR THE WRAPPER

  1. Mix the flour, cornstarch, salt and water in a bowl until it's a flowing consistency without lumps. (Similar to making pancakes)
  2. Grease the non-sticky fry pan with the vegetable oil using a tissue paper, brush or any other means you can find.
  3. Put the pan on low heat.
  4. Gently pour the mixture in the pan using a spoon or a brush to brush the mixture on the pan surface. Let it fry, then shake out and turn it into a filter to cool. Repeat this process until the mixture is exhausted.


There, you have gotten your spring roll wrapper, ensure the wrapper is as thin as possible to avoid breakage when wrapping.

FOR THE FILING

  1. Put the cabbage and carrots in the chicken stock (if you don't have you can use seasoning cubes) and boil to make it tender.
  2. On a frying pan, put oil and add the onions plus other vegetables, with the cabbage and carrots, fry. While frying, add the boiled minced meat, seasoning cubes and salt to taste. You can add the pepper according to taste.

The filing is ready.

Fill the wrapper with the filing, wrap with the seal (flour and water) to tuck the ends.



Bake for few minutes until it is brown and crusty.
You can also fry.

I prefer baking though, seems healthier and neater.
